Originating from the Lombardy region in Italy, this is a great way to experience lean British beef. This delicious pork Coppa is made real slow! Giving it as much time in the chamber as possible, up to 5 months to mature. This gentle aging process allows it to develop slowly, avoiding overdrying and to generate a rich fruity flavour, and soft marbled texture. Crafted from retired breeding sows providing a superior meat for charcuterie it is highlighted perfectly with the collars being not only twice the size as a standard collar but also having twice the marbling as a standard pig. Sows can be 4-5 years old and usually get exported to the continent so the creators are very proud to be providing a use for these animals in the UK. The name Kabanos (Cabanossi / Kabanoski / Kabana in Polish), comes from the word ‘kabanek’, a nickname given to young fat hogs. One of the most popular Polish sausages and probably the finest sausage stick in the world! It’s the Pepperami that went to finishing school - great with a bit of Mustard and your favourite beverage. A simple air dried British ham - using the eye of the pork loin (which is the area towards the back, between the shoulder and back legs) and is the leanest, most tender part of the animal. It is cured in salt before being rubbed with a little olive oil and flavoured smoked Spanish paprika and a little garlic & hung in a natural casing. The pork loin is wide and flat. A large fresh flavoured salami typical of Calabria in the South Western region of Italy, made with coarsely minced British Pork leg, creamy fat, and mixed with a selection of sweet medium-heat chillies as well as Hungarian paprika. The name Sopressata is derived from the practice of pressing the salami between pieces of wood resulting in a straight, rectangular flattened shape. Nduja (Pronounced "en-DOO-ya") is one of the most versatile British cured meats and is the perfect addition to almost every dish. Because of its texture, and its tendency to essentially dissolve when it comes into contact with heat, 'nduja is uniquely easy to mix into dishes both at the beginning and end of cooking. Watch it melt into punchy puddles of Pork fat on a pizza, stir it into a quick tomato sauce for pasta, fold it into mayonnaise, add it to poached eggs for an added bite, add it to a stews & soups, or perhaps baste or marinate it over your meats and/or vegetables for the BBQ. You can also add to anything in a roasting tray, or use it to dip your bread or crackers into. The simplest way to enjoy 'nduja is spread on toasted, crusty bread—a preparation we’ll never turn down. The meat is therefore much older than is generally used for beef consumption, but it contains a lot of beautiful and deep flavours, which make this ideal for salami production. This is also a much more sustainable product, as this beef is usually largely transported over long distances to continental Europe to be turned into sausages, rather than being used domestically. This is made from the same recipe as the smaller drier French style sausages in the Bastardo Beef Salami, but as a larger salami of around 65mm diameter, the result is a fresher, slightly more moist slice. The curing and air dried maturation process results in a soft and creamy texture that is complemented with a hint of warm spices.
